Delicious Homemade Blender Hummus

easy homemade blender hummus

I literally can’t believe I’ve been buying store bought hummus for so long.

I was under the impression that I needed either a food processor or a Vitamix blender in order to make this stuff and for some reason I thought it would be a pain in the ass to make, take forever and make a huge mess.

Turns out I was able to make a legit batch of this Mediterranean deliciousness with my $25 blender from Target in less than 15 minutes. Seriously?!

Needless to say, my addiction has now worsened. Are there 12 step programs for hummus addicts?
Not only is it delicious and nutritious, it’s gluten and dairy free, making it a huge staple of my diet! So…

Without further adieu, I present you with the simple-ass recipe:

  • 1 (540 ml) can chickpeas, drained & rinsed
  • 2 tbsp good quality olive oil
  • 2 tbsp good quality tahini
  • 4 tbsp fresh lemon juice
  • 2 small garlic cloves, chopped (or use roasted garlic for a sweeter taste, this is my fave!)
  • 1/4 cup water as required to process (you may need a bit more, just keep an eye on the consistency as it blends)
  • 1/2 tsp sea salt or pink salt
  • Additional olive oil, paprika, & parsley for garnish

    • Chop and squeeze fresh lemon juice into a bowl
    • If using fresh garlic, chop it
    • Chop a bit of parsley for garnish

Get your ish together…

  • Dry ingredients first!
  • Add water slowly, as needed
  • Blend it up – I take the lid off once it gets going and stick a spoon in there around the edges while its blending to make sure it gets as mixed up as possible
  • Transfer to a bowl, add a sprinkle of paprika and chopped parsley, and drizzle olive oil

Mix it up yo…

Have fun and experiment with different variations, like adding jalapeno for some spice or doing avocado or black bean versions. The possibilities are endless!

Serve with tortilla chips, or my favorite lately is just baby carrots and mini bell peppers!

Full disclosure: this does in no way mean I do not want a Vitamix blender!

Fresh Roasted Corn & Black Bean Summer Salad

Fresh Roasted Corn & Black Bean Summer Salad

It’s amazing how practicing yoga makes me so much more aware of what I put in my body.

This is something I absolutely love about yoga. After I have a sweaty, challenging practice I don’t want to eat shit food. Healthy, mindful eating just seems to come so naturally.

Your body is your temple… Be mindful when you cook and when you eat. Put love into the food you cook. People can taste it. As you eat your food, think about and tell yourself how the food is nourishing your body. Energy and the power of our thoughts are incredible.

This delicious cold salad is vegan, high in protein & so easy to make!

It’s great by itself or as a side. My favorite way to eat it lately is on top a bed of greens topped with sliced avocado and honey mustard dressing drizzle… YUM! Make a big bowl and keep it in the fridge…

Fresh Roasted Corn & Black Bean Summer Salad

three ears of corn

1 can organic black beans

1 cup cooked red quinoa (1/2 cup uncooked) – protein, baby!

1/2 small red onion, chopped

1 cup grape tomatoes, chopped

1/2 cup cilantro, chopped

juice of 1-2 limes

pink himalayan salt, to taste

1) Preheat oven to 425F.

2) Cook the quinoa: put 1/2 cup uncooked red quinoa in a pot with 1/2 cup water. Bring to a boil then simmer with lid on for 15 minutes. Cool in fridge.

3) Put whole ears of corn in oven with husk on. Keep an eye on them – rotate occasionally until they turn dark brown-blackish. Take them out, let them cool for a few minutes. Take off the husks and cut the corn off the cob. Chill corn in fridge for a bit.

4) Combine chilled quinoa & corn with all other ingredients, mix it up and enjoy!

5) Be grateful & always give thanks for the little things, which are huge things to some people… like a delicious meal.

6) Always EAT YOUR COLORS & drink lots of water to stay hydrated in the heat!
